Easy Carrot Soup
I had been meaning to make this carrot soup for a few weeks but every weekend has been crazy busy so when Jonas was predicted, I finally jumped at the chance. Although this recipe is pretty straightforward and only requires a few ingredients, it does take time to prep (lots of chopping and stirring) so you definitely need a block of time and some patience. That’s why Saturday’s storm was the ideal scenario for making soup…I put on some music, sipped some wine, and really savored this rare opportunity to just chill out. I opted to forgo the herb yogurt because my kids were getting hungry so I simply topped it with a dollop of plain Greek yogurt and fresh parsley. I also added a pinch of turmeric because I throw it into practically anything I can (it’s sooo good for you…it acts as an anti-inflammatory which is especially beneficial during cold and flu season). Plus, turmeric gives food a vibrant punch of color (I love adding it to eggs, chicken, even my homemade french fries). Of course, on a snowy day, you can’t have a steaming bowl of soup without warm bread so I sliced up a baguette with butter and we all devoured it within minutes.

This looks absolutely amazing! Two of my favorite restaurants serve carrot soup – one with red curry and the other with dill, and both are delicious. I’m always looking for new vegetarian soup recipes so I think I will have to give this a try!
