Apple Cinnamon Pancakes

Of course, after a day spent apple picking and returning home with enough apples to feed my entire neighborhood (and then some), I decided I’d better start researching as many recipes as possible.  Traditionally, I wait until Thanksgiving to recreate this sublime apple pie or this mouth watering pear apple cranberry crisp, both by the awe inspiring Barefoot Contessa (wouldn’t you  just love to hang out in her kitchen?).  And then it dawned on me…a lazy Sunday morning spent in my pj’s plus copious amounts of coffee calls for a big stack of steaming pancakes…with apple, cinnamon and a generous sprinkling of powdered sugar.  I relied upon this recipe and I instantly knew it was a hit when there was complete silence at the breakfast table…for at least three minutes.
