Apple-Pear Galette

The past couple of Thanksgivings, I have been relying on this crowd pleasing recipe for a traditional apple pie.  Well, I should take that back.  The first year, it would have been a hit had I not forgotten the sugar.  It truly was heartbreaking.  I had just popped it into the oven after all the peeling and chopping and let’s not even mention the pie crust from scratch when I realized I had omitted this vital ingredient.  I was inconsolable.  The following year, I managed to remember the sugar but my crust was a disaster and it didn’t look as pretty as the first year.  While the pie tasted good, I admit I’m a stickler for presentation and this version definitely was not pin-worthy.  So, with Thanksgiving  rapidly approaching, I decided to take the pressure off of myself this year and come up with an easier, stress free alternative.  When I spotted this recipe for an apple-pear galette, I was immediately intrigued.  The notion of not having to artfully drape the second layer of crust over the top provided me with a huge sense of relief.  And what was even better was the fact that this recipe calls for store bought pie crust (#nojudgement)!  My toddler and I joined forces the other afternoon and whipped this pre-Thanksgiving concoction up in no time.  It was an ideal after school snack, all warm and bubbly right out of the oven, topped with none other than a generous scoop of vanilla ice cream …
