Whenever I feel like I need a quick and easy burst of nutrition, I turn to this blueberry-kale smoothie to do the job. Aside from the fact that kale and blueberries are two major superfoods loaded with a ridiculous amount of benefits, it’s also incredibly refreshing and tasty. Simply combine kale, blueberries (fresh or frozen), low fat plain yogurt, a splash of milk, a dash of agave nectar and two tablespoons of ground flax seed in the blender over ice and within no time, you have yourself a powerhouse smoothie. I like these on the go in the morning or as an afternoon treat when I’m feeling sluggish and need a little push to get me through the rest of the day. I instantly feel energized and satiated without any guilt! Oh, and the best part is that the kids love these too. I would never be able to convince them to eat kale but once it’s blended with the blueberries, they don’t even know what they’re drinking. They just think it’s a fun and colorful treat and I feel like a pretty successful mom (at least for a brief moment).
