The Easiest Paleo Brownies

I decided to go gluten and dairy free for a bit because my digestive system has been off (perhaps too many chips and margs on vacation?).  I find the gluten-free aspect not too bad.  There’s gluten-free bread, pasta, and cereal and thank God Pirates Booty falls under that category because I do live on it in between meals (no one’s perfect).  But, the dairy-free part is a bit more challenging.  I don’t mind almond milk in my coffee or cereal but that’s where it ends.  I also really love cheese….a lot.  And I miss yogurt even though it does tend to upset my stomach.  I love the Noosa yogurt, specifically the key lime flavor.  If you can tolerate dairy, run to the grocery store and buy it asap.  It’s that good!  I’ve fallen off the wagon a couple of times.  There were some Trader Joe’s sea salt brownies I may have eaten and some homemade pizza.  But, all in all, I’m trying and I must say, my stomach is actually feeling better.  So, as much as I love those sea salt brownies, the next time I feel the need to treat myself, I’ll whip up these easy paleo brownies instead.  They require only seven ingredients and one bowl.  It couldn’t be simpler and they passed the kids’ taste test.  They call them Mom’s “healthy brownies.”  Give them a try and let me know what you think!

Ingredients: 

  • 1 cup almond butter
  • 1/3 cup agave or pure maple syrup
  • 1 egg
  • 2 tbspn coconut oil
  • 1 tspn pure vanilla
  • 1/3 cup cocoa powder
  • 1/2 tspn pure baking soda

Directions: 

  • Preheat oven to 325 degrees
  • In a large bowl, whisk together the first five ingredients
  • Stir in the cocoa powder and baking soda
  • Pour batter into a 9 inch baking pan
  • Bake for 20 minutes (may need a few extra minutes)
  • Serves six although I cut them into smaller bite-size squares
