Easy Quinoa Salad With Fresh Vegetables

I know, I know.  I haven’t shared a recipe here on the blog in ages!  That is primarily due to the fact that most nights when I’m making dinner, it’s already dark and all bloggers know that the best photos are taken in natural light (hurry up daylight savings).  So, even though I’ve had many dinners and desserts I’ve been meaning to share, I didn’t plan ahead and make them in the afternoon.  Anyway, this past weekend, I did make this quinoa salad with fresh vegetables ahead of time and so here it is!  It’s so easy, quick and healthy….the perfect weeknight dinner that can double as lunch the next day or it’s an ideal dish to bring to your next gathering.

Quinoa Salad With Fresh Vegetables: 

Ingredients:

  • 1 cup quinoa
  • 1 small container of colorful cherry tomatoes
  • 1 English cucumber
  • 1 red bell pepper
  • 1 celery stalk
  • 1 tablespoon fresh parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon olive oil
  • 1/4 cup reduced fat crumbled feta cheese (optional)

Directions: 

  • Cook quinoa according to package directions
  • Cut tomatoes in half (or if larger, cut them into quarters)
  • Dice up cucumber, pepper and celery
  • Mix vegetables with quinoa in a large bowl
  • Add olive oil, parsley, salt and pepper
  • Top with feta cheese
  • Can be served at room temperature or chilled
