Fish Cookies

When my four year old son requested fish cookies the other day, I was slightly confused.  I wasn’t quite sure if he actually meant cookies made out of fish (although that wouldn’t surprise me) or if he was referring to fish shaped cookies.  Once we cleared things up, I was relieved to learn that he meant the latter.  I must admit, sugar cookies with icing are not my strong suit.  I always manage to break the cookies when I’m transferring them from the cutting board to the cookie sheet.  If I somehow am able to avoid breaking them, then icing them in a neat and presentable fashion is my next challenge.  But, Patrick was determined so we ordered this cookie cutter as well as this one and then we scoured the internet for different ideas.  I finally settled upon this easy and quick sugar cookie recipe, then carefully rolled the dough out and cut them into their respective shapes. We then discovered this user friendly and creative tutorial for decorating the cookies (so cute, right?).   I was compelled to improvise a lot because I could not find meringue powder anywhere for the royal icing so I begrudgingly bought the Betty Crocker icing (shhh…don’t tell).  And even that was an issue because the store did not have the colors I was searching for.  So, I settled on green and blue which seems appropriately aquatic if you ask me.  I think these would make a charming gift if they were individually packaged with clear wrapping as favors for a summer birthday party or simply as a hostess gift when you’re invited to your next pool party or backyard barbecue.  We simply enjoyed them as an afternoon treat with iced tea just because….
