Grapefruit Margaritas
When we were down in Hilton Head a few weeks ago, I found myself craving poolside grapefruit margaritas so my husband promptly whipped up this version minus the Triple Sec (we also used fresh grapefruit juice instead). They were so light, refreshing, and appropriately tropical….the perfect cocktail to beat the heat and usher in happy hour. Now that we’re back in New York and the weather is gradually shifting, these margaritas will be ideal coupled with a homemade Mexican meal for one of our Saturday evening “date nights” after the kids go to bed. I’m dying to give these quinoa black bean tacos a try! They look fairly easy to make plus I love the idea of swapping out ground beef for a healthier alternative.

Yum! Margaritas and Palomas are my favorite but I had never thought to try grapefruit in a margarita. Sounds fantastic!
