Green Salad With Goat Cheese, Apples and Raisins

Any one else like me insofar as not loving the weekly excursion to the grocery store?  Pre children I didn’t mind it so much but now a trip to the supermarket (or in my case BJ’s) means lists, coupons, a cranky child and complete pandemonium.  So, I know I shouldn’t, but I put it off as much as I can.  I push it to the point where the cupboards are bare and I’m compelled to get really creative with meals.  The other night, after whipping up blueberry pancakes (with flax) for the kids, I rummaged through the refrigerator to see what kind of dinner I could come up with for my husband and myself.  To my delight, I realized we still had a package of goat cheese and a bag of apples so I decided to toss these two together over a bed of greens and top it with some golden raisins.  I relied on my go-to lemon vinaigrette because when all else fails, what’s better than a combo of fresh lemon juice and olive oil?  I think the key to any goat cheese salad is to serve it at room temperature because all the flavors seamlessly blend together to create what my husband would call ” a party in your mouth.”
