Healthy BLTs
The past few weeks, I’ve been compelled to whip up quick, easy and fuss free dinners due to my two sons’ hectic baseball schedules. I think I spend more time on a baseball field than I do anywhere else but quite honestly I really don’t mind. I love watching them excel at something they’re truly passionate about. So, the other evening, in an attempt to make something convenient and wholesome, I decided to try out this recipe for healthy BLTs, otherwise known as BLATs (bacon, lettuce, avocado and tomato). As much as I love mayonnaise, I tend to stay away from it especially during bathing suit season so this reduced fat recipe which calls for a tiny bit of mayo mixed with mashed up avocado and chopped basil sounded like the perfect alternative. I used this bacon and served it all on whole wheat toast (minus the alfalfa sprouts). I’m thinking next time, I may have to try it out on sourdough bread…now, wouldn’t that be delicious?

Delicious. I am making BLT’s right now for lunch. I never thought of avocado on them but will try it today. Delicious idea
