Iceberg Slaw

While I appreciate a traditional potato or macaroni salad, it’s fun to switch things up by creating summer side dishes with a twist.  I’m pretty picky about my coleslaw and therefore I generally prefer to make my own (love this version) so when I spotted this easy and quick recipe, I was instantly intrigued.  I usually don’t opt for iceberg lettuce but every once in a while, I crave a cold one with a creamy dressing so this recipe for iceberg slaw was calling my name.  The idea of infusing fresh herbs such as dill and parsley and mixing it up with low fat yogurt (reduced guilt is always the way to my heart) sounded so enticing, I had to whip it up over the weekend for our Father’s Day barbecue.  It definitely did not disappoint and when the kids scarfed it down with their hot dogs and steak, I knew we had a winner.
