Lemon Yogurt Cake
There’s something so refreshing and invigorating about lemons that naturally they make the perfect addition to any spring dish. So, when I spotted this recipe for lemon yogurt cake, I was instantly intrigued. My mini lemon muffins are a big hit in our house so the idea of a pound cake with a lemon sugar glaze seemed like something all of us would certainly appreciate. Surprisingly, it was so easy to whip up and before I knew it, the house smelled absolutely heavenly. After I took it out of the oven, I let the cake rest for about ten minutes before brushing the top with the lemon sugar mixture. That was by far, the piece de resistance. The glaze seeped into the crevices of the cake and infused it with a zesty and moist center that made this version simply sublime. I enjoyed mine as a late afternoon snack with a cup of tea but honestly, this cake can be enjoyed any time of day all year long.

I might have to try this. Greek yogurt and a substitute for egg will hopefully not change it too much! I wonder if I get it gluten free too!
