One Bowl Chocolate Chip Muffins
The weather here in New York has been particularly gloomy and unseasonably cool so the other day I decided to spend the afternoon baking with Patrick. He loves to pull his “baking chair” up to the counter and help me measure and mix the ingredients. We agreed on these one bowl chocolate chip muffins which were so easy to make and were conveniently ready just as the boys were getting off the school bus. I followed this recipe but replaced the butter with coconut oil and substituted sugar with 3/4 cup of agave nectar. I also decided to forgo the sugar topping because the chocolate chips are sweet enough. They taste the best right out of the oven with a tall glass of milk (or in my case, with a generous cup of green tea).

I would have never thought of using coconut oil, how interesting. I have a coconut farm in northern Brazil and oddly enough the oil is still quite expensive to buy even though they are grown locally.
That said, I do buy it but haven’t tried using it in place of butter. I will have to have a go at this recipe.
