Orange Yogurt Mufffins With Orange Glaze

Muffins are such a quick and easy mid-day snack to whip up so I make muffins for my kids on a regular basis.  Their favorite are these banana chocolate chip ones and this apple cinnamon version but it’s fun to mix it up from time to time so I decided to tweak this recipe.  To make these a tad healthier, I used gluten free flour, used Greek yogurt in lieu of sour cream and substituted coconut oil for butter.  I forgot to add two tablespoons of ground flax seed which is what I usually throw into all my baked goods since they’re loaded with Omega-3 fats, lignans (which are natural antioxidants) and fiber.  So, make sure you include these as well!  Fyi: you can also add flax seed to pancakes, oatmeal, cereal and even your salad dressing.  Now, back to these muffins….they are seriously so good!  The orange zest is what makes these incredibly tasty…both in the muffins and the glaze.  These were a big hit so I’ll probably make these the next time I host a brunch or have overnight guests.
