Spring Risotto

One of the things I look forward to about the weekends is cooking with my husband once the kids are in bed on a Saturday night.  We typically agree on a menu that morning and then after a day of running around with the kids, we unwind and relax with some wine and music as we prepare our dinner.  I actually prefer this than to going out.  Don’t get me wrong….I love getting out of the house with my husband but as I’m getting older, I’m learning I’m more of a homebody than I realized.  I find cooking extremely therapeutic and incredibly satisfying especially when I am able to create a beautiful and delicious meal.  Risotto is fun to make because it requires a lot of stirring so we take turns while enjoying our wine and an appetizer.  This past weekend, I was craving some comfort food so we decided to try out this spring risotto recipe which includes zucchini and peas and a generous sprinkling of fresh parmesan cheese (the best part).  It exceeded my expectations….so fresh, rich and creamy….and pretty too!  The perfect dish if you’re hosting a spring dinner party!  We paired it with Sauvignon Blanc but it would also taste great with a crisp Rose.
