Tzatziki With Feta and Olives

While I appreciate the traditional cheese plate or crudite platter when I’m entertaining or as a guest in someone else’s home, it’s always refreshing to mix it up with some unexpected options such as this easy tzatziki with feta and olives. I spotted this recipe a while ago and had every intention of making it but it does require some prep work (and I’m not always the best at pre-planning…just ask my husband…haha!). So, I decided to test it out on my kids and husband over the weekend and figured if it was a hit with them, it’ll be worth it to make ahead of time the next time we have company over. At first my kids balked at the idea of cucumbers in their dip but after some encouragement, they gave it a try and before I knew it, the six of us had inhaled the whole plate. Just an fyi…I swapped out dill for chives in the dip and unfortunately, I left my thyme at the supermarket (I think I forgot to put it in my bag at the self check-out…#frustrating) so I simply drizzled the feta with olive oil and it was still sooo good!
