Watermelon Salad with Feta and Mint
As much as I love my go to Greek kale salad, there are times when I feel the need to switch things up a bit. So, when I spotted this recipe for watermelon and feta salad, I knew I had to give it a try. The combination of sweet and salty coupled with fresh mint won me over immediately. I opted to forgo the onions and tabasco sauce despite my husband’s protests (he likes it hot while I prefer things on the mild side). I have to say, I was a bit dubious as to the addition of the olives but honestly, I think they elevated this salad to a whole new level. I whipped this up over the weekend for a tailgating party before the Lady Antebellum concert (amazing!) and it went perfectly with Skinny Girl grapefruit margaritas! Summer may be half way over but this a dish I can see myself enjoying all year long.

This is going on my grocery list right now! I am with you on the not spicy and my husband is the same way as yours – he wants spicy! That sounds like an awesome concert with awesome snacks and drinks!!

I made a similar salad last weekend but used a balsamic vinaigrette from TJ’s and added diced green onions…I’ll have to try it with the olives though, that sounds amazing!
