Epic Chocolate Cake
So, when you’re stuck in doors and you’re craving something pretty bad (for your health, not your taste buds), look no further than this recipe for epic chocolate cake. I’ll admit, my guilt got the best of me and I swapped out oil for fat free yogurt for the cake but I did not skimp when it came to the butter cream frosting. All three sticks of butter and five generous cups of confectioners sugar contributed to this insanely good frosting…I don’t think I’ve encountered a comparable low fat version but please correct me if I’m wrong. And yes, I had a sliver for breakfast, lunch and post dinner but who’s counting (I know you would too if it was, like, four degrees out…don’t we all need a little pick-me-up?)

My friend recently made the BEST vegan cake. Thanks for reminding me to ask for the recipe! Being allergic to eggs and dairy makes cake a big no no!

That cake looks ridiculously delicious!! Have you heard of Portillos? They are famous for their Chocolate Cake Dessert (and their hots dogs and Italian beefs among other goodies…) and Chocolate Cake Shake, and your cake looks even more mouthwatering. Seriously… I would totally get down on the cake for breakfast, lunch, and after dinner, too!! YUM!

And now I’m going to be thinking about cake for the remainder of the day, and if we’re being honest, until I cave and grab a slice somewhere. This looks amazing! I love how you swap out ingredients for healthier versions. Next time I bake a cake I’m going to have to try it with yogurt instead.
