Low Fat Cornbread

To me, a proper Thanksgiving meal is not complete without a generous slice of warm, comforting cornbread begging to be topped with rich gravy and fresh cranberry sauce…are you picturing this?   So, of course I had to whip up a practice batch the other afternoon because Thanksgiving morning is no time to experiment!  (Believe me…been there, done that.)  This time, I opted for a low fat version because I prefer to save my calories for a piece of pumpkin cheesecake…and perhaps a sliver of apple pie as well.  I have to say, this recipe did not disappoint.  It took very little time to make, required basic ingredients that were already in my cupboards, and the best part was the house smelled heavenly.  I enjoyed mine with a cup of tea as a late afternoon snack and now I’m wondering why I only make this once a year…
