Skinny Nacho Dip
I may not be the biggest fan of football but when it comes to Super Bowl Sunday, I love embracing all the hoopla and naturally, the food. I’ve never met a chip I didn’t like and the same can be said for all the accoutrements. A mountain of nachos, refried beans, guacamole, sour cream and melted monterrey jack cheese is a pretty good time. But, let’s face it…the amount of fat and calories consumed in one helping is a very scary thought. So, instead, I whipped up this skinny nacho dip as a “healthy” alternative. Of course, my husband opted to make his traditional version and we inadvertently ended up turning it into a little competition where the kids were the judges. I am pleased to say my lighter fare was the winner (although I may have sampled the original dish…a few times). Coupled with these skinny orange-lime margaritas, this is the ideal way to kick off happy hour.

KATE!! This post is perfect. I went to Whole Foods today to get my favorite dip and they were out of it, but I love the idea of making it at home so I know what goes into it.

I love taco dip but never make it because how fatty it is. I love that you just gave me an equally delicious sounding dip but much healthier.
