Low Fat Blueberry Crisp
Last week, I was in the mood for something sweet, fresh and somewhat healthy. So, after perusing the refrigerator and discovering a plethora of blueberries, I decided to attempt this low fat blueberry crisp. I whipped it up as the kids were eating their dinner and popped it into the oven while they were taking their baths (don’t you love it when your plans come to fruition?). Conveniently, it was ready in a jiffy…just in time to enjoy on the deck as the sun was setting (I paired mine with a glass of Rose). But, the next day, I felt compelled to pick up a pint of vanilla frozen yogurt (the Stonyfield one is my favorite fyi) per my daughter’s request and savored the left-overs heated up with a generous scoop on top.

I have picked alot of blueberries this year. This will be a great recipe to make. It looks good.
