100 Calorie Blueberry Muffins
It’s safe to say that sweets of any kind are my biggest vice. It’s incredibly hard for me to resist a brownie, cookie, cake or muffin. But, lately, my clothes have been feeling a tad tight (all this hibernating makes me hungry) so I’ve decided to cut back on my late afternoon sweet treats and replace them with healthier alternatives. While I enjoy a piece of fruit and a little cheese to tie me over, some days I’m just craving something I can sink my teeth into and savor with a cup of tea. So, the other day, when I began to dream about the Starbucks drive through, I opted instead to whip up these 100 calorie blueberry muffins. I tweaked the recipe ever so slightly by substituting applesauce for low fat plain yogurt, white sugar for raw sugar and by adding two tablespoons of ground flax seed. Quick, simple, healthy and satisfying never tasted so good…
