Almond Strawberry Banana Smoothie

In an effort to veer away from frozen breakfasts in the morning, I’ve been alternating between this banana bread, these muffins, and different kinds of smoothies (love this one and this one).  But, after recently switching to almond milk for my coffee and lattes, I decided to mix it up and try out this almond strawberry banana smoothie (which fyi, the recipe is on this almond milk carton).  After whipping it up in the blender, I was shocked at how good it was!  The consistency and the flavor exceeded my expectations as well as  my kids’ because they never realized I used a different kind of milk.  Here’s this easy and quick recipe:

  • 1 cup almond milk
  • 1 1/2 cups fresh or frozen strawberries (I used fresh)
  • 1/2 cup of fresh or frozen pineapple cubes (I used frozen)
  • 1 small ripe banana
  • 1 tbsp ground flax seed (or chia seeds)

Add all the ingredients to a blender and puree until smooth. Garnish with fresh strawberries or bananas.  Makes 2 servings.
