Apple Cheddar Scones

A few weeks back, during one of our countless snow storms, I found myself with very few snacks in the cupboard and a house full of hungry children.  So, after rummaging through the pantry, I realized that these apple cheddar scones were going to be my saving grace.  I had never attempted to make scones prior to this because I always thought of it as a daunting task.  I didn’t realize that all these required were nine simple ingredients that are a staple in most homes.  The most important thing to remember is to keep the butter very cold because this is what makes the scones rise higher…. no one wants a dense scone.   My trick is to dice it up, put it in back in the refrigerator, and take it out when needed.   The house smelled divine and within a mere fifteen minutes, they were ready to be taken out of the oven.  Of course, a snow day is not complete without hot chocolate with whipped cream so I felt obliged to indulge.  Seven scones were devoured within minutes but I did manage to save the last one for my husband…after all, he did shovel the drive way!
