Cranberry Bread
I bought a huge bag of fresh cranberries the other week with the intention of making these cranberry margaritas but life happened and I never got the chance. So, yesterday, when I was unexpectedly compelled to stay home with a sick child (#halloweenitis), I decided to make this warm and comforting cranberry bread. It was so easy to whip up and although it took a while in the oven, the house smelled insanely good…definitely worth the wait! I tweaked the recipe slightly to make it a little healthier by adding two tablespoons of ground flax seed to the dry mixture, using one cup of regular flour and one cup of whole wheat flour and cutting the butter amount in half and swapping the rest with natural applesauce. I also added some lemon zest (although orange zest would be just as nice) to give it some additional flavor. We enjoyed it as an afternoon treat but I think this would also be the perfect breakfast as you’re dashing out the door. Next time, I plan on making several breads and freezing them so I’ll have a quick and healthy breakfast on hand whenever I’m rushing (which is pretty much everyday).
