Easy Arugula Salad
This salad from Barefoot Contessa is ridiculously easy to make and is sooo good…trust me, once you make it, it”ll quickly become part of your regular rotation. All you need is arugula, a block of really good parmesan cheese (expensive, yes, but it lasts a long time), olive oil, lemons, and kosher salt. I especially like to make this salad during the spring and summer months because I like to pair it with grilled chicken or fish and a glass of white wine. The other night, I whipped it up along with some Naan bread pizzas (they’re an ideal weeknight meal because you can top them with lots of healthy options- my two favorites are mushrooms and a kale/feta combo- and and they’re ready in just ten minutes). Sometimes I throw some roasted sweet potatoes over it or sliced up avocado to give it an extra kick but the possibilities are endless so don’t be afraid to experiment and put your personal stamp on it!

I have never used Arugula for salad because I heard it was bitter. It sounds good so I plan to try it.

I made a really good salad for dinner tonight!! This one looks tasty and so easy… and I love the simple lemon juice and olive oil dressing!! There’s a “fancy” pizza place by me and they serve a delicious burrata dish that comes on a bed of arugula… having had that dish a few times, I KNOW this salad will be tasty!!
