Easy Lemon Cookies
Upon returning from our trip, I found myself with empty cupboards and an even emptier refrigerator. So, when I was craving something sweet to accompany a cup of tea, I decided to whip up these easy lemon cookies. Thankfully, I had the nine simple ingredients listed and within no time, the kids and I were scarfing them down. The first batch, I made the cookies slightly larger than I had intended so the second time around, I filled the ice cream scoop three quarters of the way for smaller cookies…and possibly less guilt.

Yum. I love lemon cookies and bars. I think the citrus makes a great dessert and always feels like the perfect ending to a meal.

Lemon is quite possibly my favorite ingredient. It’s so great that this recipe includes things that I almost always have on hand regardless of how bare my fridge is. Thanks for sharing.
