Trio of Cheeses

Last summer, my husband and I took a weekend trip to Philadelphia (you can read about it here) and while we were there, we went out to dinner one evening to a charming little restaurant called Farmica.  It was the ideal setting…lovely weather, outdoor seating and a menu that was out of this world.  However, what stood out to me the most was the appetizer we ordered….a trio of cheeses (cow, sheep and goat milk cheeses served with fruit chutney and mini toasts).  I enjoyed mine with a cold, crisp glass of Rose and ever since, I’ve been meaning to replicate this tasty triumverate.  The other night was the perfect excuse.  The kids were playing out in the yard, my husband was grilling and I sipped wine and sampled some Havarti (cow’s milk), Manchego (sheep’s milk) and goat cheese flavored with honey.  While I didn’t have the time to whip up that delicious fruit chutney (definitely on my to do list this summer), I did pair mine with grapes and green apples which was just as satisfying.  Of course, with this plethora of cheese sitting in my refrigerator, I’ve been turning to it for the past few days (in fact, last night my dinner consisted of fruit and cheese…and wine …no judgement please).  I think it’s high time to dust off that baby jogger and hit the ground running…I definitely don’t want to look “cheesy” on the beach!
