Sciue Sciue Pasta
Considering that October is National Pasta Month, I thought it would only be fitting to share my favorite go-to quick and easy pasta recipe. This particular version is referred to as “Sciue Sciue” which means improvisation in Italian. Naturally, the foundation for this dish is the pasta and then you can improvise and essentially throw in a smorgasbord of items from your refrigerator and cupboard. I usually keep this dish simple since I mostly make it for my kids so I adhere to Giada’s directions by merely adding garlic, fresh basil, plum tomatoes and mozzarella. I made a big pot of this the other night because we actually still have an abundance of tomatoes growing in our backyard and I needed an alternative to salad. Pasta is one of those things I could pretty much eat all the time…anything that pairs well with bread and red wine is a sure fire winner in my book. Plus, this time of year, I tend to crave comfort food in a major way so this dinner definitely hit the spot.
