Easy Lemon Bars

Since Easter is just around the corner and considering the fact that I’m hosting this year, I’ve been very busy pinning away ideas for tablescapes (last discussed here) and seasonally appropriate menus.  While I’m looking forward to the traditional lamb, asparagus and baby red potatoes to name a few, the part of any meal that I savor the most will always be dessert.  That being said, I’ve been researching simple and light options that will hopefully appeal to everyone.  So, when I came across this recipe for easy lemon bars, I knew I would have to give it a try immediately.  I was pleasantly surprised how uncomplicated it was to whip these up and even happier knowing that I already had all the necessary ingredients.  Of course, the true test was when my four food critics entered the kitchen to sample my latest experiment.  After a few golden minutes of silence, I knew I had a winner on my hands…
