Grapefruit, Cucumber and Jalapeño Margarita

This past weekend, we were out in Fire Island staying with our friends who made these outstanding grapefruit, cucumber and jalapeno margaritas.  I was hooked on the presentation alone.  I mean, how could anyone resist this pretty, pink cocktail?  I opted to forgo the jalapeno in mine because I can’t handle the heat but everyone else raved about the combo of the cool cucumber and the spicy jalapeno.  That being said, I loved the grapefruit, cucumber and lime mixture which was immensely refreshing.  Just a little warning:  sip these slowly because these margaritas go down very smoothly.  Here’s the recipe:

Ingredients:

  •  1 oz agave nectar
  • 1 jalapeno
  •  1 large English cucumber diced
  •  3 oz silver tequila
  •  limes, divided
  •  ½ cup grapefruit juice
  •  kosher salt
  •  lime wedges

Directions:

  • Cut jalapeno into small pieces.
  • Combine agave, jalapeño and cucumber in a cocktail shaker and muddle well. Add tequila, juice of 2 limes and grapefruit juice. Fill cocktail shaker with ice, cover, and shake well.
  • Squeeze juice of 1 lime onto a small plate. Sprinkle some kosher salt onto another small plate. Rim two rocks glasses by dipping them first into the lime juice, then the salt. Fill glasses with ice and strain margarita into glasses. Garnish each with 1 slice cucumber or 1 lime wedge.
