Low Fat Apple Cinnamon Muffins

As I mentioned in Friday’s post, I have a major sweet tooth so I usually search for healthier versions or swap out certain ingredients in lieu of butter, oil and refined sugar (oh…and did I mention that I throw ground flax seed into pretty much everything?).  Naturally, I felt compelled to bake with apples following our trip out to The Milk Pail last weekend.  We came home with a lot of apples so I was infusing apples into salads, pancakes or simply slicing them and pairing them with cheddar cheese (one of my favorite mid-afternoon snacks).  I was drawn to this particular recipe for low fat apple cinnamon muffins  due to the crumbly topping and I will admit, I did use butter for this part and in fact I used a little more than the directions called for…but can you blame me?  Sometimes, butter is necessary, right?  The rest of the recipe is on the healthier side…I did alter it a bit by adding two tablespoons of flax, substituting coconut oil for olive oil, and adding nutmeg as well as the allspice (I used a half teaspoon each).  I also swapped out white sugar for raw sugar for the topping which truly was the best part.  My kids ate the top and left the bottom half which I was more than happy to devour.
