Mini Mushroom and Herb Frittatas

I have been a huge fan of frittatas for as long as I can remember.  They’re easy, quick and incredibly versatile.  Honestly, unless you’re averse to eggs, what is not to like?  You can tailor them to your liking….seriously, the possibilities are limitless.  I definitely rotate between a few variations…Greek with spinach, tomatoes and feta or potato, ham and cheddar or sausage with parmesan (haven’t made that one in a while…so good).  A lot of times, it ends up being a smorgasbord of items in my refrigerator that I have on hand.  Those are the most interesting ones…which leads me to how I recently discovered the mini frittata.   I can’t believe it took me this long to catch on to this elegant bite-sized appetizer.  I was watching Giada a few weeks ago and she was making these mini smoked salmon versions and I was instantly intrigued.  I love anything that is a one biter, especially when I am entertaining.  I find that guests shy away from larger, more awkward options (ever try to balance a plate of caprese salad with a drink in your hand?) and gravitate more towards the “minis”…crab cakes, stuffed mushrooms, pigs in a blanket (yum) or puffed pastry appetizers.  So, when I saw this segment, I was hoping for an opportunity to test it out.  Sure enough, the other weekend, we were due to have friends over for dinner and at the last minute, I realized I had not planned out an appetizer.  Frantically, I rummaged through my cupboards when it dawned on me that I had all the makings of a frittata!  Here is the recipe I loosely followed…I swapped out ham for mushrooms, parmesan for feta and I added basil.  I also cut the measurements in half because this recipe is for 40 and there were only four of us.  They went over even better than expected so now I’m already planning to serve them at my daughter’s upcoming birthday brunch and for Easter and for our next dinner party!  I’m interested to know, what are your favorite types of frittata?  Do you prefer meat, cheese, veggies or all of the above?  Searching for inspiration…
