Pineapple-Mint Mojitos

I have been dying to try out this recipe for pineapple-mint mojitos so this past weekend, we decided to declare an early cocktail hour and whip these up while we were preparing dinner.  I’ll admit, they were a bit involved (dicing up the pineapple, making a simply syrup and the pineapple puree) plus there was a sink full of dishes, but the end result was definitely worth the trouble.  They were appropriately refreshing for a hot July afternoon and the infusion of fresh mint, which we have growing in our backyard, was the perfect addition.  I would suggest making these ahead of time for guests and serving them over ice upon their arrival.
