Strawberry Cinnamon Muffins

As soon as our bananas begin to freckle, I either whip up a batch of oatmeal banana chocolate chip muffins or I make this marbled chocolate banana bread.   We seem to rotate between these two on a bi-weekly basis until one of the kids requests something different.  So, my back up muffin recipes include either pumpkin banana or lemon yogurt variations.  I had never attempted to make strawberry muffins until yesterday as I stood in front of my living room window sipping coffee and watching the snow fall yet again.  Although this weather makes me want to curl up under the covers and shovel comfort food into my mouth, I decided to rebel and instead opted to make something light, healthy and reminiscent of spring.  I altered this recipe ever so slightly by swapping out the butter for applesauce and strawberry jam for fresh strawberries.  These did not disappoint.  Patrick and I enjoyed them right out of the oven…in fact, we had two each and then I had another one later in the day with a cup of tea.  And yes, I did hide the last one in a secure location because as soon as the kids get on the bus this morning, I’m going to share that lone survivor with my mini sous chef.  We have big plans…
